Mediterranean Baked Salmon in a Parmesan Crust

- 2 x 180g/6oz fillets Salmon - skinned shopping list
- ½tsp Garlic - very finely chopped shopping list
- 100g/3½oz Cream cheese - “Philadelphia” shopping list
- 1 Lemon - zest only - to taste shopping list
- 2tbsp Parmesan Reggiano - grated shopping list
- Quantity Breadcrumbs shopping list
- 2tbsp fresh Dill - finely chopped shopping list
- Smoked Paprika - for sprinkling - to taste shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Preheat the oven to 200C/400F/Gas 6.
- Season both sides of the salmon fillets and place on lightly greased kitchen foil in a roasting tin;
- In a small bowl, mix the cream cheese, garlic and lemon zest to taste;
- Season to taste with salt and pepper and spread the mixture on top of each fillet;
- Similarly, in a small bowl, mix the breadcrumbs, parmesan and dill and again season to taste;
- Sprinkle this mixture over the cream cheese one and then sprinkle paprika over the top;
- Bake in the oven for some 12 to 15 minutes or so or until the salmon is just cooked through;
- Serve
