Savoury Shepherds Pie

- 200g cubed onions shopping list
- 40g butter shopping list
- 20g dried flower mushrooms shopping list
- 20g buckwheat shopping list
- 1 cup black beans shopping list
- 150g water shopping list
- 100g turkey stock shopping list
- 11g knorr chicken stock powder shopping list
- 295g cubed carrots shopping list
- 20g dry quinoa shopping list
- 2 bay leaves shopping list
- 400g lean ground beef shopping list
- 1 teaspoon salt shopping list
- Pepper to taste shopping list
- 1500g or 6 potatoes shopping list
- 200 ml 10% cream shopping list
How to make it
Caramelized Onions
- The evening before set a saucepan on low with the butter and onions. Stir occasionally. Allow to caramelize to a rich brown colour, about three hours.
Presoak
- Soak the black beans overnight in enough water to cover plus two centimetres.
- Soak the dried mushrooms and buckwheat overnight covering with boiling water.
Slow Cooker
- Rinse the black beans and put in the slow cooker enough water to cover, bay leaves, bouillon, stock, and quinoa.
- Squeeze excess moisture out of the mushrooms, cut off and discard the stems, and cube the mushrooms. Add to the bean mixture.
- Lay the unpeeled potatoes on top. Cook on high for two hours.
- Remove the potatoes and allow to cool.
- Scramble fry the hamburger and add to the bean mixture. Add the drained buckwheat.
- Peel and cube two carrots and add to the slow cooker. Cook on low for another hour until tender.
- Peel the potatoes with the dull side of a knife.
- Mash the potatoes and blend thoroughly with the half and half (10%) cream.
- You may spread the mashed potatoes directly onto the slow cooker dish or transfer the meat in to a casserole dish and spread the potatoes generously on top.
- You may sprinkle a hard cheese on top and crisp up in the oven at 500 degrees Fahrenheit for a few minutes.
