Grilled Salmon With Citrus Dill Butter

- 2 tablespoons butter, softened shopping list
- 1 teaspoon chopped fresh chives shopping list
- 1 teaspoon chopped fresh dill shopping list
- ¼ teaspoon grated lemon peel shopping list
- 1 teaspoon fresh lemon juice shopping list
- 1/8 teaspoon salt shopping list
- 2 (4 oz.) salmon fillets shopping list
- 2 sprigs fresh dill shopping list
How to make it
- Heat grill. In small bowl, combine all ingredients except salmon and dill sprigs; mix until well blended.
- When ready to grill, spread ½ teaspoon butter mixture over each salmon fillet. Place, skin side up, on gas grill over medium heat. Cook 3 minutes. Turn skin side down; spread ½ teaspoon butter mixture over top of salmon. Cook 8 to 10 minutes or until fish flakes easily with fork.
- To serve, spread remaining butter mixture over salmon fillets. Garnish with dill sprigs.
- Notes: I make the butter ahead. and then refrigerate. using a mini scoop (melon ball size) I scoop up the butter and put it into a freezer bag/container and freeze until I need it.
