How to make it

  • Preheat the oven to 425 degrees F. Grease a 12-cup muffin tin.
  • In a large bowl, combine marinara sauce, eggs, 1 cup mozzarella, Parmesan, 1/4 cup pepperoni, oregano, and garlic powder. Season with salt and pepper.
  • Toss in tots and mix until evenly coated. Pack into muffin cups, then sprinkle with remaining mozzarella and pepperoni.
  • Bake until muffins are crispy and cheese is melty, 20 to 22 minutes. Cool slightly before removing.
