Buttermilk Granola Muffins

- 2 cups granola, divided shopping list
- 2 cups white whole wheat flour shopping list
- 2 teaspoons baking powder--sifted shopping list
- 1/2 teaspoon baking soda--sifted shopping list
- 3/4 teaspoon salt shopping list
- 1 teaspoon cinnamon shopping list
- 3/4 cup brown sugar, loosely packed shopping list
- 1 cup buttermilk shopping list
- 2 eggs, beaten shopping list
- 1/4 cup coconut oil shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Heat oven to 375°F. Spray 18 regular-size muffin cups with cooking spray or use paper cups.
- In large bowl, mix 1 1/2 cups of the granola, the flour, baking powder, baking soda, salt and brown sugar. In medium bowl, beat eggs, buttermilk, oil and vanilla with whisk until combined. Add egg mixture to dry ingredients; stir just until combined.
- Divide batter evenly among muffin cups, filling each about two-thirds full. Sprinkle evenly with remaining 1/2 cup granola.
- Bake 10 minutes, reduce heat to 350°, continue baking 5-6 minutes or until toothpick inserted in center comes out clean. If granola seems to be browning too much, cover with a sheet of foil. Remove from pans to cooling racks.
