30 Minute Chicken Pomodoro

- 4 bone/skin less chicken breasts shopping list
- S&p to taste shopping list
- 3 T evoo shopping list
- 1 onion chopped finely shopping list
- 4 garlic cloves, minced shopping list
- 1 t dried oregano shopping list
- 1/4 t red pepper flakes shopping list
- 1 14.5 oz can diced tomatoes shopping list
- 1/3 c heavy cream shopping list
- 1/4 c chopped basil shopping list
How to make it
- 1. Pat chicken dry w paper towels & season w salt & pepper. Heat one tablespoon oil in large skillet over med-high heat until just smoking. Cook chicken until golden, about 3 mins per side. Transfer to a plate.
- 2. Heat remaining oil in empty skillet over med-high heat until shimmering. Cook onion until soft about 5 mins. Add garlic, oregano, & pepper flakes & cook until fragrant, about 30 secs. Stir in tomatoes, cream, salt & bring to boil. Return chicken & any accumulated juices to skillet. Simmer, covered, until chicken is cooked through about 10 mins.
- 3. Transfer chicken to platter & tent with foIl. Summer sauce, uncovered, until slightly thickened, about 5 mins. Off heat, stir in basil & season w salt & pepper. Pour sauce over chicken & serve. (Over orzo, pasta or rice)
