Balkan Salad

- 3 to 4 ripe tomatoes , chopped shopping list
- 1 long English cucumber , chopped shopping list
- 1 green bell pepper, chopped shopping list
- 1 red bell pepper, chopped shopping list
- 1 yellow bell pepper, chopped shopping list
- 1 lg. red onion, chopped shopping list
- ~ ~ ~ ~ shopping list
- 8 oz. feta or Mozzarella cheese shopping list
- fresh chopped parsley shopping list

- DRESSING: shopping list
- 3 tbsp. wine vinegar shopping list
- 1/3 c. olive oil shopping list
- Salt & pepper, pinch sugar shopping list
- Generous pinch of oregano shopping list
How to make it
- Slice bell peppers; discard pith and seeds.
- Cut onion into rings.
- Break up cheese with a fork.
- In medium bowl, combine pepper rings, onion rings and cheese.
- To make dressing, in a small bowl, beat together vinegar, oil, salt, pepper and sugar.
- Stir in oregano.
- Sprinkle dressing over salad.
- Top with crumbled feta cheese and sprinkle with fresh chopped parsley.
- Refrigerate for about 20 minutes, or until ready to use.
- Serves 4 to 6.
