How to make it

  • Slice bell peppers; discard pith and seeds.
  • Cut onion into rings.
  • Break up cheese with a fork.
  • In medium bowl, combine pepper rings, onion rings and cheese.
  • To make dressing, in a small bowl, beat together vinegar, oil, salt, pepper and sugar.
  • Stir in oregano.
  • Sprinkle dressing over salad.
  • Top with crumbled feta cheese and sprinkle with fresh chopped parsley.
  • Refrigerate for about 20 minutes, or until ready to use.
  • Serves 4 to 6.
