How to make it

  • PIE: Preheat oven to 425^.
  • Butter a 10" spring-pan.
  • Roll out dough to 12".
  • Place into pan and press onto sides and bottom.
  • Toss apples, sugar, and spice.
  • Spread apples evenly in crust.
  • Top with 2nd crust, press crust onto sides as high as possible.
  • Use foil "tent" over top of crust on sides(keep from burning).
  • Cut slits in top crust.
  • Bake at 425^ for 25-30 minutes.
  • Remove from oven and cool completely.
  • CHEESECAKE: Preheat oven to 450^.
  • In a large bowl, blend cream cheese until smooth.
  • Add sugar and flour.
  • Add eggs one at a time, scraping down sides of bowl between each.
  • Add cinnamon, vanilla, and cream, mixing thoroughly
  • Pour into cooled pan, bake at 450^ for 10 minutes.
  • Reduce temp. to 250^ and continue baking for 1 hour.
  • Let cool completely, chill overnight before serving.
  • Top with cinnamon glaze, serve with sweetened whipped cream.
