How to make it

  • Mix 1 1/2 cups of the vanilla crumbs and melted butter together and press into an 8 x 12" pan (reserved 1/2 c. of crumbs for the top of the dessert). Cream 1/2 c. butter, blend in the icing sugar. Add the eggs. Beat well. Spread on the crumbs. Whip the 1/2 pint of whipping cream and add sugar (use more to taste if desired). Drain the crushed pineapple well and fold in to the whipped cream. Spread over the mixture in the pan. Top with the remaining crumbs. Cover with plastic wrap and chill overnight.
