How to make it

  • Heat 3 tablespoons of oil in a very large, deep skillet and cook the sausages, onions and garlic over medium to medium-high heat for about 10 minutes, turning the sausages to brown nicely and stirring the onions.
  • Once the sausages are nice and brown and the onions and garlic are sweated and transparent (but not burnt), remove the sausages from the pan and add the canned tomatoes, drained lentils, and drained beans and stir everything together. Taste for seasoning and salt and pepper at this point if required.
  • Put the sausages back into the skillet and cover. Turn the skillet to medium-low and cook until the sausages are cooked through.
  • Once the sausages are cooked through, remove them from the skillet and stir the spinach in, replace the lid and let the spinach cook for two or three minutes. Replace the sausages just to re-warm them and then serve.
  • A good accompaniment to this dish is sweet potatoes if you require something extra.
