House Call Cheesecake

- 12 oz. Dr. Pepper, reduced to 1/4 cup shopping list
- CRUST: shopping list
- 1 1/2 cups vanilla cookie crumbs shopping list
- 1/4 cup light brown sugar shopping list
- 1 tea. cinnamon shopping list
- 1/2 tea. cardamom shopping list
- 1/2 tea. allspice shopping list
- 4 Tbsp. butter, melted shopping list
- CAKE: shopping list
- 2 pounds cream cheese, RT shopping list
- 1 cup light brown sugar, lightly packed shopping list
- 1/4 cup AP flour shopping list
- 4 large eggs shopping list
- Dr. Pepper reduction shopping list
- 1/3 cup Maraschino cherry syrup shopping list
- 1/4+ cup bourbon shopping list
- 1 Tbsp. vanilla shopping list
- 3/4 cup heavy cream shopping list
How to make it
- REDUCTION:
- In a small saucepan, bring Dr. Pepper to simmer.
- Reduce heat slightly and cook until about 1/4 cup remains.
- This should pour like a thick syrup; cool to room temp.
- CRUST:
- Butter 9-10" spring-pan.
- Mix ingredient completely.
- Press onto bottom and sides of pan evenly, set in freezer.
- CAKE: Preheat oven to 475^.
- In a large bowl, beat cream cheese until smooth.
- Add brown sugar and flour.
- Add eggs one at a time, scraping down bowl after each.
- Add Dr. Pepper & Maraschino syrups, then bourbon and cream.
- Blend until just incorporated.
- Pour into prepared crust, tap to raise bubbles. pop.
- Bake at 475^ for 15 minutes.
- Reduce temp. to 250^ and continue baking for 1 hour.
- Remove from oven and cool to room temp.
- Chill overnight before serving.
