Simple Tomato Sauce

- 1 28 oz. Can of San Marzano or Hunts as 2nd choice tomatoes Whole - hand crushed shopping list
- 6 oz guanciale (pork jowl) cut 1/8 in x 3/4 in slices shopping list
- 1 T EVO shopping list
- 1/4 c dry white wine shopping list
- 1 medium yellow onion peeled & chopped shopping list
- Course black pepper shopping list
- Red Pepper flakes shopping list
- 1 oz grated Pecorino Romano cheese shopping list
- Add a pinch of salt if needed shopping list
How to make it
- Place tomatoes and juice in a large bowl hand crush
- Place oil & guanciale in a large saucepan, saute till crisp
- Add chopped onion and saute till transparent
- Add crushed tomatoes and juice
- Bring to a boil , reduce heat and Simmer for 20 minutes
- Taste for salt
- Add white wine
- Simmer, stirring occasionally for 20 more minutes
- Add pepper to taste and pepper flakes
- Simmer for 10 more minutes
- Add Pecorino Romano cheese.
- Simmer for another 10 minutes.
- Adjust seasoning to taste
- Sauce should be moderately thick
- Serve over bucatini or any other long pasta
