How to make it

  • Place tomatoes and juice in a large bowl hand crush
  • Place oil & guanciale in a large saucepan, saute till crisp
  • Add chopped onion and saute till transparent
  • Add crushed tomatoes and juice
  • Bring to a boil , reduce heat and Simmer for 20 minutes
  • Taste for salt
  • Add white wine
  • Simmer, stirring occasionally for 20 more minutes
  • Add pepper to taste and pepper flakes
  • Simmer for 10 more minutes
  • Add Pecorino Romano cheese.
  • Simmer for another 10 minutes.
  • Adjust seasoning to taste
  • Sauce should be moderately thick
  • Serve over bucatini or any other long pasta
