How to make it

  • Save the pickle juice and the jar from the store. I had leftover syrup from a bread and butter pickle recipe.
  • Peel and cube two potatoes.
  • Dry the potatoes with a terry dish towel.
  • Spread out the potatoes in a glass dish, sprinkle with the salt and vinegar, and stir to coat. Let sit for two hours to sweat out excess moisture.
  • Rinse the potatoes in a colander under cook water, and pat dry with the tea towel again.
  • Pour the pickle juice in to a medium saucepan and add the potato cubes.
  • Bring to a boil and simmer for ten minutes.
  • Pour the pickled potatoes back in the pickle jar and store in the refrigerator.
