Tater Pickle

- 2 potatoes, peeled and cubed shopping list
- 2 tablespoons sea salt shopping list
- 1 teaspoon vinegar shopping list
- 1 1/2 cups pickle juice shopping list
How to make it
- Save the pickle juice and the jar from the store. I had leftover syrup from a bread and butter pickle recipe.
- Peel and cube two potatoes.
- Dry the potatoes with a terry dish towel.
- Spread out the potatoes in a glass dish, sprinkle with the salt and vinegar, and stir to coat. Let sit for two hours to sweat out excess moisture.
- Rinse the potatoes in a colander under cook water, and pat dry with the tea towel again.
- Pour the pickle juice in to a medium saucepan and add the potato cubes.
- Bring to a boil and simmer for ten minutes.
- Pour the pickled potatoes back in the pickle jar and store in the refrigerator.
