Eggplant Parmesan

- 1 globe eggplant, about 1 pound shopping list
- fine bread crumbs or panko 1/3 cup shopping list
- Parmesan cheese 1/4 cup shopping list
- Italian spices 1 1/2 teaspoons shopping list
- salt and papper (optional) shopping list
- 1egg shopping list
- marinara sauce half a jar. shopping list
- cheese, mozzarella (my soy cheese even melted!!) Sliced mozzarella or grate , whichever floats your boat. shopping list
How to make it
- Preheat oven to 400 F Slice eggplant in circles 1/2 inch thick
- In two shallow bowls put slightly beaten egg in one and the crumbs + spices, First dip the eggplant slice in the egg, and follow with the seasoned crumbs (you may include a few T. parmesan in the spiced crumbs or add the Parmesan after turning over the eggplant slices when baking.. Place on a silpat or tin foil or parchment paper to bake. Bake 20 to 25 minutes, they will look toasty. Turn over and bake another 15 minutes. Remove from oven and set aside.
- In a small casserole, spoon a dollop of marinara on the bottom and then place toasty eggplant slices all around to make one layer. Place cheese on top. Add a couple of dollops of marinara, Continue to layer until no more eggplant slices.Cover and return to oven and when the cheese is melted, It should be ready. Serve with a crispy green salad.
