How to make it

  • Set Oven to 400 F
  • -Season the pork on all sides with seasoning salt and garlic powder.
  • -Peel and cut apples into slices
  • -put sugar in pan with water cook on medium high until sugar melts and starts browning, it is caramelizing then let it continue until golden brown and butter and cream to the melted sugar mixture. It will froth up and bubble stir until the caramel calms down reduce heat to low add apples. The mixture will get loose while apples lose their moisture continue to cook on med low stirring occasionally to keep from burning.
  • -Cut down center of tenderloin along entire length being careful to only cut half way through the meat and spread it out. If required butterfly the loin for more pocket space. See Photo
  • -season cut portion of meat as well
  • -take caramel apples off heat and let cool so it thickens and can be handled without burning yourself. Once its cooled off pour into the middle of the meat pocket insuring apple pieces are along the length of the loin.
  • - Take bacon strip and wrap around loin to hold it together secure with tooth picks. continue until entire loin is wrapped in bacon . See Photo
  • -Place on parchment covered baking sheet and place in oven 35-40 mins
  • until golden brown and meat has achieved the desired temp of doneness See Photo
  • Take out and let rest ten minutes slice and enjoy!! See Photo
