Curry Kalabasa Corned Beef Stew

- 2 cups cubed kalabasa/squash shopping list
- 1 cup onions chopped into wings shopping list
- 5 garlic cloves chopped finely shopping list
- 1 baby green chili shopping list
- 1 teaspoon grated ginger shopping list
- 1 cup tomatoes cubed - red shopping list
- 3 red bell peppers - small shopping list
- sprinkle of brown sugar shopping list
- salt to taste shopping list
- 1 flat teaspoon black pepper shopping list
- 1 tablespoon flat curry powder shopping list
- 2 tablespoons white vinegar shopping list
- 1 tablespoon lemon juice shopping list
- 2 tablespoons soy sauce. shopping list
- 1 can 250 grams corned beef or equivalent of ground beef or chicken chest - ground shopping list
How to make it
- 1 saute your onions till they are light brown then drop your kalabasa and sprinkle with the curry, brown sugar, and black pepper
- 2- as soon as your kalabasa can be divisible by your spoon, it's time to drop the bell peppers, garlic , ginger and chili and let stirfry while continuously stirring for 6 minutes on medium fire.
- 3- drop your vinegar, lemon, soy and tomatoes and stir well and let to boil on medium fire.
- 4- as soon as the water in the pan decreases by half you drop your corned beef and stir thoroughly. Let this simmer for another 6 minutes on medium low fire. Once sauce has reduced again, turn off fire and serve next to plain rice.
- Notes: If using actual ground beef or chicken, saute the meats with the onions as soon as the onions glisten, then drop your kalabasa and continue with the rest of the steps.Pay attention to the amounts of salt, I usually only add a sprinkle to balance the taste since soy has salt and so does the corned beef unless you are using actual ground beef or chicken.
