How to make it

  • Using a food processor, combine cranberries and 1/4 cup sugar. Pulse until well chopped. Set aside. Combine 1/2 cup sugar, flour and butter and pulse until crumbly. add extract, orange zest and cranberries. Pulse a few times until mixed.
  • Divide dough into two sections. Place onto wax paper and shape into a roll of approximately 2-inches in diameter. Pat to flatten the ends and place rolls in freezer gallon size bag. Freeze until ready to bake.
  • Preheat oven to 325 degrees. Cut slices using a sharp/clean knife to 1/4-1/2 inch thickness. Place on parchment paper and bake for 12 minutes. (Note that the cookies will seem a bit undercooked, but will firm as they cool).
  • Enjoy

    I love JUST LOVE the new girl scout cookies that are cranberry shortbread. I am so hoping this is like them. They no longer make them, it was a specialty cookie sale.
