Orange Cranberry Shortbread Cookies

- 1/2 cup dried cranberries, chopped with 1/4 cup sugar shopping list
- 1/2 cup sugar shopping list
- 2 1/2 cups all purpose flour shopping list
- 1 cup cubed/cold butter shopping list
- 1 teaspoon orange extract shopping list
- zest of 1 medium orange shopping list
How to make it
- Using a food processor, combine cranberries and 1/4 cup sugar. Pulse until well chopped. Set aside. Combine 1/2 cup sugar, flour and butter and pulse until crumbly. add extract, orange zest and cranberries. Pulse a few times until mixed.
- Divide dough into two sections. Place onto wax paper and shape into a roll of approximately 2-inches in diameter. Pat to flatten the ends and place rolls in freezer gallon size bag. Freeze until ready to bake.
- Preheat oven to 325 degrees. Cut slices using a sharp/clean knife to 1/4-1/2 inch thickness. Place on parchment paper and bake for 12 minutes. (Note that the cookies will seem a bit undercooked, but will firm as they cool).
