Gluten and Lactose Free Shortbread Cookies

- 2 cups of earth balance or becel vegan spread shopping list
- 1 cup of icing sugar shopping list
- 3 cups of Robin Hood gluten free flour shopping list
- 1 cup of corn starch shopping list
- A pinch of salt shopping list
How to make it
- Cream the bacel or Earth balance With the icing sugar. Add the rest of the ingredients and mix by hand until everything comes together into a ball. Or you could add everything to KitchenAid mixer and mix it until it forms into a ball.
- Roll out to desired thickness, I roll my out about a half an inch.
- Cut into shapes with cookie cutters, bake in a preheated 350 degree oven Until lightly browned. Anywhere from 15 to 20 minutes depending on the thickness of the cookie mine take about 15 at half an inch.
- I didn’t know if this would work with the changes from the regular butter and flour version, but it worked very well and very tasty.
