Viennese Style Beef Goulash

- 1 lb beef round cut into 2 inch cubes shopping list
- 2/3 lb thinly sliced onions shopping list
- 1 or 2 cloves of garlic chopped shopping list
- 1 Tbsp red wine vinegar shopping list
- 1 Tbsp tomato paste shopping list
- 1 Tbsp sweet paprika powder shopping list
- 1 tsp powdered caraway shopping list
- 1 large bay leaf shopping list
- 1 Tbsp clarified butter shopping list
- 1 cup of good beef broth shopping list
How to make it
- Brown the onions in the clarified butter til golden.
- Add the garlic, caraway, paprika, bay leaf , vineger and tomato paste. Mix thoroughly.
- Add the beef and broth with just enough water to barely cover.
- Bring to a boil, cover tightly, reduce the heat to very low and let simmer for 4 hours. Check the water level after two hours. Top off with boiling water if it looks too low. The onions will break down to make a delicious richly flavored sauce.
