Sicilian Tomato Sauce

- 1 lb mini roma tomatoes or the best canned tomato sauce you can buy. (Not a prepared sauce, but pureed tomatoes) shopping list
- 4 cloves of garlic peeled and crushed shopping list
- A couple of sprigs of FRESH basil shopping list
- Salt and pepper shopping list
How to make it
- Cut the tomatoes in half and place in a sauce pan with the garlic and basil. Bring to a boil. Lower the heat and simmer until the tomatoes break down, the garlic is tender and it has thickened. (Ca. 30 minutes.)
- Remove the basil sprigs and puree the sauce with an immersion blender. Add some fresh basil to the sauce and season with salt and pepper to taste.
- Add a couple of tablespoons of extra virgin olive oil to finish the sauce if you like.
