How to make it

  • Cut the tomatoes in half and place in a sauce pan with the garlic and basil. Bring to a boil. Lower the heat and simmer until the tomatoes break down, the garlic is tender and it has thickened. (Ca. 30 minutes.)
  • Remove the basil sprigs and puree the sauce with an immersion blender. Add some fresh basil to the sauce and season with salt and pepper to taste.
  • Add a couple of tablespoons of extra virgin olive oil to finish the sauce if you like.
