How to make it

  • To make the “bitumen” measure the first four ingredients in to a mason jar. Close the lid securely and shake vigorously to combine.
  • Preheat your griddle or George Foreman, brushing with the butter.
  • Separate the eggs, whites in to a large mixing bowl.
  • Whip the egg whites to a firm froth.
  • Slip in the water, egg yolks, and bitumen and stir briefly.
  • Sift the flour, cocoa, salt and baking powder on top and fold in just until combined.
  • Fold in the chocolate chips.
  • Spoon about 3/4 cup batter in to the griddle and cook.
  • Garnish with syrup and cherries as you wish.
