Mom's Favorite Crustless Swiss-Chard Quiche (Gluten Free)

- BASE MIXTURE shopping list
- 1 T of vegetable oil (or as needed) shopping list
- 1 sweet red onion, chopped shopping list
- 1 bunch of swiss chard, washed and chopped with tough red stems removed, neatly trimmed (for visual appeal), and diced like celery shopping list
- 1 C of cooked ham, cubed shopping list
- fresh or dried herbs to taste (optional) shopping list

- CUSTARD shopping list
- 1 C of milk shopping list
- 4 large eggs shopping list
- 2 1/2 C grated emanthel cheese shopping list
How to make it
- PREHEAT OVEN: 375 degrees F.
- BASE MIXTURE: Fry the onion and diced swiss chard stems in oil until they become soft. Add the chopped swiss chard leaves and continue to fry until they become soft. It may be helpful to put a lid over the pan and perhaps add a little water to allow the chard to steam a bit. Remove from heat and allow to COOL. Add the cubed ham and herbs (if using).
- CUSTARD: Whisk together milk and eggs. Add the grated emanthel cheese.
- QUICHE: Pour the custard mixture into the COOLED base mixture and stir. Pour into an ungreased quiche pan. Bake at 375 for 40 to 50 minutes, or until a knife comes out clean when the quiche is poked.
