How to make it

  • melt butter in pot then add the onions until translucent
  • add the 4 cups of vegetable stock
  • add the tomatoes with the juice
  • add the roasted red peppers and bring to a boil and turn down to simmer
  • add cayenne, garlic, salt , pepper to taste
  • simmer for about 20 min or so then blend all together until almost pureed
  • add cheese and the cream and serve
  • note - make sure you drain and rinse the peppers, they are in vinegar and this will make the soup taste off if not drained properly
