Easy Roasted Red Pepper Soup With Parmesan

- 1 can of diced tomatoes with the liquid shopping list
- I jar of roasted red peppers (1.5L) drained and rinsed shopping list
- 4 cups of vegetable stock shopping list
- 1 cup of sweet onion chopped shopping list
- 1 tsp of garlic in jar shopping list
- 4 tbsp of butter shopping list
- salt and pepper shopping list
- 1/8 tsp of cayenne or to your liking shopping list
- 1 cup of light cream shopping list
- 1/4 cup of parmesan cheese shopping list
How to make it
- melt butter in pot then add the onions until translucent
- add the 4 cups of vegetable stock
- add the tomatoes with the juice
- add the roasted red peppers and bring to a boil and turn down to simmer
- add cayenne, garlic, salt , pepper to taste
- simmer for about 20 min or so then blend all together until almost pureed
- add cheese and the cream and serve
- note - make sure you drain and rinse the peppers, they are in vinegar and this will make the soup taste off if not drained properly
