How to make it

  • Preheat oven to 200 C/400F/Gas 6;
  • Lightly oil an ovenproof foil or foil lined tray;
  • Stirring continuously, combine the mustard, mayonnaise and yoghurt in a shallow dish and season to taste
  • On a second dish, again stirring well, combine the breadcrumbs and the paprika and season to taste;
  • Dunk the chicken thighs in the mustard mixture, ensuring each totally and equally covered, coat them similarly in the breadcrumbs and place in the foil tray
  • Lightly oil top side of thighs;
  • Place the thighs on the tray oiled side down;
  • Place tray in oven and cook for some 45 minutes or so, turning at least once halfway through so that the thighs become moist, tender and crispy;
  • When turning again lightly oil other side of thighs and again place oiled side down;
