Baked Crispy Mustard Mayonnaise Chicken Thighs

- Extra Virgin Olive Oil shopping list
- 4 BLSL chicken Thighs shopping list
- 4tbsp Dijon Mustard shopping list
- 3tbsp Mayonnaise shopping list
- 3tbsp Greek or Greek Style Yoghurt - to taste shopping list
- 2 to 3tsp Smoked Paprika - or more - to taste shopping list
- Quantity dried Breadcrumbs - sufficient to coat the thighs shopping list
- Salt and freshly ground black pepper - to taste shopping list
How to make it
- Preheat oven to 200 C/400F/Gas 6;
- Lightly oil an ovenproof foil or foil lined tray;
- Stirring continuously, combine the mustard, mayonnaise and yoghurt in a shallow dish and season to taste
- On a second dish, again stirring well, combine the breadcrumbs and the paprika and season to taste;
- Dunk the chicken thighs in the mustard mixture, ensuring each totally and equally covered, coat them similarly in the breadcrumbs and place in the foil tray
- Lightly oil top side of thighs;
- Place the thighs on the tray oiled side down;
- Place tray in oven and cook for some 45 minutes or so, turning at least once halfway through so that the thighs become moist, tender and crispy;
- When turning again lightly oil other side of thighs and again place oiled side down;
