Pasta With Sausage And Pumpkin Sauce

- 1 pound cooked and drained penne pasta( cook pasta in water with a little salt) shopping list
- 1 cup canned solid pumpkin shopping list
- 4 to 6 ginger snap cookies shopping list
- 1 small onion, diced shopping list
- 1/4 cup diced bell pepper shopping list
- 1/3 roll of mild breakfast sausage, browned shopping list
- 3 cloves minced garlic shopping list
- Tsp creole spice shopping list
- 1/2 cup heavy cream shopping list
- 1 cup chicken broth shopping list
- Fresh sage leaves, sliced or torn into pieces ( 2 or three leaves in perfect but use more if desired) shopping list
- Parmesan cheese to taste shopping list
- 1/2 stick butter shopping list
- 1/4 cup sliced green onions shopping list
How to make it
- Brown sausage in large skillet, stirring to break up sausage.
- Remove sausage from pan and set aside.
- Melt butter in the same skillet over medium, add onions and bell peppers.
- Cook onions and bell pepper for about 3 minutes or until almost translucent.
- Stir in garlic and cook another minute or two.
- Remove from heat.
- Add ginger snaps to a food chopper or processor and pulse to crush cookies.
- Add sausage and onion mixture and pulse a few more seconds to blend. In the skillet you browned onions and sausage, add cream, broth and bring to a boil.
- Stir in sausage mixture, seasoning, canned pumpkin and 1/4 cup Parmesan cheese.
- Stir and lower heat to low medium setting.
- Cook for 3-5 minutes .
- Place mixture in serving bowl.
- Add fresh sage, sliced green onions and cooked pasta. Toss. Add more Parmesan cheese to taste.
- Top with more fresh sage if desired
