How to make it

  • Brown sausage in large skillet, stirring to break up sausage.
  • Remove sausage from pan and set aside.
  • Melt butter in the same skillet over medium, add onions and bell peppers.
  • Cook onions and bell pepper for about 3 minutes or until almost translucent.
  • Stir in garlic and cook another minute or two.
  • Remove from heat.
  • Add ginger snaps to a food chopper or processor and pulse to crush cookies.
  • Add sausage and onion mixture and pulse a few more seconds to blend. In the skillet you browned onions and sausage, add cream, broth and bring to a boil.
  • Stir in sausage mixture, seasoning, canned pumpkin and 1/4 cup Parmesan cheese.
  • Stir and lower heat to low medium setting.
  • Cook for 3-5 minutes .
  • Place mixture in serving bowl.
  • Add fresh sage, sliced green onions and cooked pasta. Toss. Add more Parmesan cheese to taste.
  • Top with more fresh sage if desired
