Fisherman's Soup

- - 1-2 tablespoons olive oil shopping list
- - 1 onion, diced shopping list
- - 4 garlic cloves, diced shopping list
- - 1 leek, diced shopping list
- - Sea salt and pepper shopping list
- - ¾ cup white wine (whatever you like, but I prefer a dry white wine) shopping list
- - 2 lbs variety of fish, cut into large chunks shopping list
- - 1 lb shrimp shopping list
- - ½ lb cod shopping list
- - ½ lb mahi-mahi shopping list
- - 2 tomatoes on the vine, diced shopping list
- - 5 small golden potatoes, cubed shopping list
- - ¼ teaspoon thyme shopping list
- - 1 bay leaf shopping list
- - pinch of chili powder shopping list
- - Water to cover everything shopping list
How to make it
- 1. Heat a dutch oven or large pot over med-high heat and add in olive oil, onion, garlic, leeks, and salt and pepper.
- 2. Saute for about 5 minutes.
- 3. Add white wine and simmer for another 2-5 minutes to reduce.
- 4. Add fish, tomatoes, potatoes, thyme, bay leaf, and chili powder.
- 5. Add enough water to cover everything.
- 6. Bring to boil, reduce and simmer the Greek fisherman's soup for 15-20 minutes.
- Once done, taste and adjust seasonings to preference.
- Serve Greek fisherman's soup with some bread and enjoy!
