Key Lime Pie

- - 3 cups (approx 10 oz) graham cracker crumbs. shopping list
- - 6 Tbsp. (about 3 oz) unsalted sweet cream butter. shopping list
- - 1 14-oz can of sweetened condensed milk. shopping list
- - 10 egg yolks. shopping list
- - 1/2 cup plus 1 1/2 Tbsp. (approx 5 oz) lime juice. shopping list
- - 1/3 cup vodka (your choice. If you like it. use it.). shopping list
- - 1 cup heavy cream. shopping list
- - 1 cup powdered sugar. shopping list
- - 1/2 tsp. vanilla extract. shopping list
How to make it
- 1. Preheat your oven to 300 degrees.
- 2. in a mixing bowl, combine the graham cracker crumbs and butter.
- 3. Press evenly on the bottom and up the sides of a 9-inch pie pan.
- 4. In another mixing bowl, whisk together the condensed milk, egg yolks, lime juice and vodka until smooth. (you want it SMOOTH).
- 5. Pour until the filling is just set, about 15 minutes. Let cool completely, then refrigerate overnight.
- 6. Before serving, make the whipped cream by beating the cream, powdered sugar and vanilla extract in a stand mixer on high speed until stiff peaks form, about 5 minutes.
- 7. Are you ready? Sure? Serve the pie with a generous dollop of whipped cream.
