Easy Lasagna Soup

- 1/2 lb. (8 oz.) Ground beef shopping list
- 1/2 small Onion - minced shopping list
- 2 - 3 cloves Garlic - minced shopping list
- 1/2 tsp. Fennel seeds (optional) shopping list
- 1/4 tsp. Red Pepper Flakes (optional) shopping list
- 4 c. (32 oz.) chicken broth shopping list
- 1 Tbs. Tomato Paste shopping list
- 12 oz. Tomato basil pasta sauce (in jar) shopping list
- 1 tsp. dried Parsley Flakes shopping list
- 1 tsp. dried Oregano Flakes shopping list
- 1 Bay Leaf shopping list
- 1/4 tsp. Cracked black pepper (or to taste) shopping list
- 5 oz. Bow Tie pasta (about 2 cups) shopping list
- ***Toppings*** shopping list
- Shredded Mozzarella cheese shopping list
- Grated Parmesan cheese shopping list
- Ricotta cheese shopping list
How to make it
- 1. In soup pot, on medium heat, sautee ground beef and onion till beef is browned.
- 2. Add garlic, fennel/anise seeds, and red pepper and cook another minute.
- 3. Add chicken broth, tomato paste, tomato sauce, parsley and oregano flakes, bay leaf, and black pepper. Bring to boil.
- 4. Reduce heat and add pasta. Cook till al-dente. Remove bay leaf.
- 5. Ladle hot soup into bowl and top with cheeses of your choice in desired amount.
- * I find no salt is needed as there is enough in the pasta sauce and chicken stock.
- * If you don't use a tomato basil pasta sauce add 1 tsp. dried basil.
