How to make it

  • 1. In soup pot, on medium heat, sautee ground beef and onion till beef is browned.
  • 2. Add garlic, fennel/anise seeds, and red pepper and cook another minute.
  • 3. Add chicken broth, tomato paste, tomato sauce, parsley and oregano flakes, bay leaf, and black pepper. Bring to boil.
  • 4. Reduce heat and add pasta. Cook till al-dente. Remove bay leaf.
  • 5. Ladle hot soup into bowl and top with cheeses of your choice in desired amount.
  • * I find no salt is needed as there is enough in the pasta sauce and chicken stock.
  • * If you don't use a tomato basil pasta sauce add 1 tsp. dried basil.
