Hearty Mexican Rice

- 2 cups long grain white rice (rinsed and dry) shopping list
- 3 tablespoons olive oil shopping list
- 1 clove garlic minced shopping list
- 1/2 cup finely chopped sweet onion shopping list
- 1/2 cup chopped Roma tomatoes shopping list
- 1/2 up corn shopping list
- 1/2 chopped potatoes shopping list
- 1/4 cup chopped carrots shopping list
- 3 cups vegetable broth (or chicken broth, or water) shopping list
How to make it
- Soak rice in hot water for five minutes and drain off water.
- In large covered skillet, heat oil and saute rice 8-10 minutes. Add onions, potatoes, garlic, and carrots in oil for 3-5 minutes. Add remaining corn and tomatoes. Add broth (or water), cover and cook low-medium for 20 minutes. Uncover and gently stir rice. Recover and allow to rest for 10 minutes.
