How to make it

  • Soak rice in hot water for five minutes and drain off water.
  • In large covered skillet, heat oil and saute rice 8-10 minutes. Add onions, potatoes, garlic, and carrots in oil for 3-5 minutes. Add remaining corn and tomatoes. Add broth (or water), cover and cook low-medium for 20 minutes. Uncover and gently stir rice. Recover and allow to rest for 10 minutes.
  • Enjoy!
