Newfoundland Fish Cakes

- 1 pound salt cod. shopping list
- 2 pounds russet potatoes. shopping list
- 1 large white onion diced. shopping list
- 2 eggs beaten. shopping list
- Fresh pepper. shopping list
- bacon grease. shopping list
- Flour. shopping list
How to make it
- Put the salt cod in a large bowl and cover with cold water.
- Leave the bowl on the counter for 4 hours, draining and covering with cold fresh cold water 3-4 times.
- After 4 hours cook the potatoes till tender.
- Cook the onion till tender and opaque, they cook more in the fish cakes.
- When the potatoes are done drain and mash.
- In a large bowl add fish,potatoes, onion and eggs.
- Mix all together.
- Let cool for about 10 minutes.
- Shape into desired patty shape.
- Dredge in flour and fresh pepper shaking off excess.
- In a large skillet add bacon grease on medium high heat.
- When the bacon grease is melted and hot add the fish cakes.
- Turn over when they get crispy brown( about 4-6 min.)
- Then fry for another 4-6 min.
- NOTES:
- When I make them they are about 4 inches in diameter and 1 inch thick.
- The bacon grease should be very hot so the fish cakes get a good sear on both sides.
- I put 6 servings but it depends how big or small the patties are.
- We eat them with green tomatoe chow chow and home made brown beans.
