Apricot Habanero Salsa

- 2 cans diced fire-roasted tomatoes shopping list
- 1/2 red onion, diced shopping list
- 1/2 bunch fresh cilantro, chopped shopping list
- 8 oz dried apricots, chopped shopping list
- 4 habanero peppers, diced shopping list
- 2 cloves garlic, minced shopping list
- salt and pepper to taste shopping list
How to make it
- Mix together all ingredients in a medium sized bowl. Cover and refrigerate about 6-8 hours before serving. The longer it sits, the better it gets.
- *Note: If you have fresh garden tomatoes, substitute 4 large tomatoes for the canned tomatoes.
