How to make it

  • Melt butter in a heavy skillet over medium heat. Add sliced leeks, white part only, and saute`. Bring broth to a boil in a large pot. Add leeks nd simmer approximately 45 minutes. Add sliced potatoes and cook 20-25 minutes longer. Before serving, top each bowl of soup with some crumbled bacon, if desired. Serve with toasted French bread.
  • *I like it best made with ham stock, but it's good either way.
