Pork Ragu Pasta Sauce

- 1.25 - 1.5 pound Pork Loin shopping list
- 3 Italian Sausage links shopping list
- 1 (28oz.) can San Marzano whole peeled tomatoes shopping list
- 3 large cloves of Garlic - crushed shopping list
- 1/2 c. Red Wine (be generous) shopping list
- 1/2 t. dried Oregano shopping list
- Salt to taste shopping list
- Grated Italian cheese (parmesan or peccarino romano) - optional shopping list
- Hot Red Pepper flakes - optional shopping list
How to make it
- Cut Pork Loin into chunks.
- Pierce Sausage links with a fork.
- Crush tomatoes. (I like to pulse them with an immersion blender).
- Add all ingredients to a crock pot and cook on low for 8 hours.
- Half way thru cooking lift the lid of the crock pot and wipe the built up moisture on the lid away to help sauce thicken. Do so again an hour later and if needed an hour later again. (Sauce thickness is a personal preference so cook accordingly).
- When the sauce has cooked for 7 hours remove the pork and shred then return the shredded pork back to the pot.
- When ready to eat boil pasta, drain pasta well, and toss with sauce.
- Grated cheese and a sprinkle of red pepper flakes optional.
- I would say sauce made is enough for 1 pound of pasta.
- (You can use other cuts of pork if desired)
