Easy Blackberrry Muffins

- 1/2 cup of butter, softened shopping list
- 1 1/4 cup plus 1 tablespoon sugar shopping list
- 2 large eggs shopping list
- 2 cups all purpose flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/2 cup milk shopping list
- 2 cups fresh or frozen blackberries shopping list
How to make it
- Mix butter and 1 1/4 cup sugar. Add eggs, one at a time, mixing well. Combine flour, baking powder, and salt, mixing alternately with milk, beating well after each addition. Fold in blackberries.
- Fill paper muffin cups or greased muffin tins 2/3 full. Sprinkle remaining sugar over the muffins. Bake at 375 degrees 20-25 minutes or until toothpick inserted in the center comes out clean. Cool 5 minutes before setting on wire racks. Serve warm.
