How to make it

  • In a soup pot, sauté the carrots , bell pepper, and celery in the butter and olive oil,over medium low heat for 4-5 minutes.
  • Add chicken meat and broth and bring to a boil.
  • Cook for 12-15 minutes.
  • Stir in noodles and continue to cook 8-10 minutes.
  • Lower heat to low and stir in cream cheese and cheese.
  • Stir well.
  • Add seasonings and salt and pepper to taste.
  • Continue to cook another 5-10 minutes
  • Add parsley if desired.
  • Serve with crackers or hot French bread slices
