Kielbasa Soup

- 1 lb kielbasa shopping list
- 1-2 cans of diced tomatoes shopping list
- 1 cup of grape tomatoes shopping list
- 2 or 3 cooked Yukon gold potatoes shopping list
- 4 stalks celery shopping list
- 1 cup diced carrots. shopping list
- 1 yellow onion. shopping list
- 1 handful of fresh basil leaves shopping list
- Pepper to taste shopping list
- 1 tsp of garlic powder (or 1 crushed garlic clove) shopping list
- 1/2 tsp McCormick dried vegetable seasoning shopping list
- dash of powdered ginger shopping list
- 16 oz box of organic chicken bone broth shopping list
How to make it
- Slice kielbasa into small chunks and sauté lightly in olive oil.
- Chop onions and add to skillet. Saute until softened.
- Dice potatoes, celery, and carrots and add. Cook over medium heat for about 15 minutes until veggies are almost tender.
- Add grape tomatoes and canned diced tomatoes.
- Transfer to a large sauce pan. Add seasonings and bone broth.
- Simmer over medium low heat for about 25 minutes to blend the flavors and finish cooking the vegetables.
