How to make it

  • Heat the oil and butter in a frying pan, add the pancetta and fry until crisp;
  • Remove and save on kitchen towel;
  • Reduce heat to low, add the onions and cook, stirring occasionally, for some 5 to 7 minutes or so or until softened but not coloured;
  • Add the garlic and the mushrooms and cook for some 3 to 4 minutes or until the mushrooms have softened a bit;
  • Add the wine, increase the heat to high, and reduce the volume of liquid by half;
  • Stir in the crème fraiche or cream and parsley and heat through and season to taste;
  • Serve on top of toasted sourdough with slices of crispy pancetta
