Italian Style Creamy Mushroom Sauce On Sourdough

- 1tbsp Extra Virgin Olive Oil shopping list
- 15g/½oz butter shopping list
- 6 Rashers Pancetta or Streaky bacon shopping list
- 1 clove Garlic - very finely chopped shopping list
- 1 Onion - finely chopped shopping list
- 240g/8oz button mushrooms - cleaned & sliced shopping list
- 150ml/5fl oz dry White Wine shopping list
- 150ml/5fl oz Crème Fraiche or Sour Cream shopping list
- 1tbsp Flat leaf Parsley - chopped shopping list
- Salt and freshly ground black pepper shopping list
- Slices Sourdough bread - to taste - toasted shopping list
How to make it
- Heat the oil and butter in a frying pan, add the pancetta and fry until crisp;
- Remove and save on kitchen towel;
- Reduce heat to low, add the onions and cook, stirring occasionally, for some 5 to 7 minutes or so or until softened but not coloured;
- Add the garlic and the mushrooms and cook for some 3 to 4 minutes or until the mushrooms have softened a bit;
- Add the wine, increase the heat to high, and reduce the volume of liquid by half;
- Stir in the crème fraiche or cream and parsley and heat through and season to taste;
- Serve on top of toasted sourdough with slices of crispy pancetta
