How to make it

  • Mix the dry ingredients in a bowl
  • .Add the stout a little at a time until you have a nice batter you probably will only need 8 to 10 ounces of the stout. The rest well I drink it.
  • Submerge one piece of cod fillet into the batter.
  • Meantime your frying oil should be heating up when at 350 degrees F (175 degrees C) it is ready to fry.
  • Add the fillet to the oil and submerge the next piece until the frying piece is golden brown. It will be a slightly darker from the color of the stout.
  • You should check on the fillet once or twice to make sure it's not sticking.
  • When golden brown set on a paper towel and lightly salt and pepper it immediately.
  • If you are lucky enough to have a professional deep fryer you can fry more then one at a time.
  • Serve with tarter sauce and lemon wedges.
  • Don't forget the chips!

    Hi BA, With Chips/Fries to you - chunky crispy on outside, fluffy in the middle -- Magic
    Has to be peas as veg.
    Sometimes now I put some smoked paprika in the batter mix - not classic but tasty - also use British beer occasionally
