Uncle Jack’s American Beef-a-roni

- 1/2 lb. macaroni (maybe a little more if you like) shopping list
- 1 1/2 lbs. lean ground beef or ground venison shopping list
- 1 Med onion, diced shopping list
- 1 tablespoon green pepper, diced fine shopping list
- 2 tsp. chili powder shopping list
- 1/2 teaspoon garlic powder shopping list
- pepper, & hot sauce (optional) to taste shopping list
- 2 (14.5 oz) cans whole stewed tomatoes, undrained shopping list
- 2 tablespoons ketchup shopping list
- 1 beef bouillon cube shopping list
- ¼ cup V8 juice (or tomato) and more if needed shopping list
How to make it
- Brown the ground beef, ketchup, bell pepper and onion together in a Dutch oven or in a large skillet. (It’s important to use lean meat but if you don’t have less 10% fat, partially cook the meat, onions, and peppers. Drain most of the fat add the ketchup and continue to cook.)
- After meat is browned add chili powder, garlic powder and season with spices to taste. Mash or dice stewed tomatoes into tiny pieces and add to beef along with the V8 juice and bouillon cube. Stir well and bring to a boil. Reduce heat, cover, and simmer while cooking macaroni.
- Cook the macaroni to according to package directions (al dente).
- Drain macaroni and add to the beef mixture, stirring well. Add more V8 juice if needed, taste and add additional seasoning as needed.
- Allow to simmer for another minute or two then serve.
