Lemon Almond Chicken

- 1 ½ lbs. Boneless Skinless chicken breast, cut into ½ inch strips (I cube) shopping list
- 1 TBS. Vegetable Oil, divided shopping list
- 2 Garlic cloves, minced shopping list
- 2 TBS. all-purpose flour shopping list
- 1 cup chicken broth shopping list
- 2 TBS. Lemon Juice or half of a lemon ( I use a whole lemon) shopping list
- 1 tsp. Sugar shopping list
- 1 tsp. Grated Lemon Peel shopping list
- ½ tsp. Dill (I leave out the dill) shopping list
- 1/2 cup Slivered almonds, toasted shopping list
- Salt and Pepper, to taste (I salt the chicken while it is raw, and leave out the pepper) shopping list
- Hot Cooked Rice shopping list
How to make it
- BEFORE! Start rice and toast almonds before you start the chicken! Don't get distracted while toasting the almonds like I have, far too many times.....
- Directions:
- Rinse chicken; pat dry and season with salt and pepper if desired.
- In large skillet or wok, over medium heat, heat 1 teaspoon oil.
- Cook chicken and garlic until chicken is no longer pink; set aside.
- In skillet, heat 2 teaspoons oil.
- Stir in flour.
- Whisk in chicken broth.
- Heat mixture to boiling, stirring constantly.
- Remove from heat; stir in lemon juice, sugar, lemon peel, and dill.
- Mix in chicken and almonds. Use salt and pepper to taste.
- Serve over rice.
