How to make it

  • Put the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan and mix everything together well;
  • Cook over a gentle heat and, continually stirring, gradually add the Guinness;
  • Continue to cook, still stirring, over a gentle heat until everything has melted and combined to form a thickish paste;
  • Stop stirring and swivel the mixture around the saucepan;
  • Remove from the heat, set aside and leave to cool a little.
  • Turn the grill to hot, toast the bread on one side only then spread the rarebit mixture over the untoasted side;
  • Return the bread, mixture side up to the grill and toast to a rich golden brown colour.
