Traditional Style Welsh Rarebit

- 240g/8oz Cheshire/Lancashire/Extra Mature cheddar cheese - grated shopping list
- 30g/1oz butter - melted shopping list
- 2tbsp Worcestershire Sauce - to taste shopping list
- 1tbsp English Mustard shopping list
- 1tbsp plain Flour shopping list
- 4tbsp Guinness beer shopping list
- 4 slices bread shopping list
- A few twists of the black pepper Mill shopping list
How to make it
- Put the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan and mix everything together well;
- Cook over a gentle heat and, continually stirring, gradually add the Guinness;
- Continue to cook, still stirring, over a gentle heat until everything has melted and combined to form a thickish paste;
- Stop stirring and swivel the mixture around the saucepan;
- Remove from the heat, set aside and leave to cool a little.
- Turn the grill to hot, toast the bread on one side only then spread the rarebit mixture over the untoasted side;
- Return the bread, mixture side up to the grill and toast to a rich golden brown colour.
