Inside Out Cabbage Rolls

- 1 pound Ground Pork shopping list
- 1/3 cup Rice (do not use instant) shopping list
- 1 tablespoon minced Garlic shopping list
- 1 small Onion minced (about 1/2 cup) shopping list
- 1/2 teaspoon Salt shopping list
- 1/2 teaspoon Cracked black pepper shopping list
- 1/2 head of cabbage - chopped (between 6 - 8 cups) shopping list
- 1 standard sized can of Sauerkraut lightly drained (14.5 ounce) shopping list
- 3 tablespoons Tomato Paste shopping list
- 6 cups Water shopping list
How to make it
- Rinse rice.
- Mix ground pork, rice, minced garlic, minced onion, salt and pepper together.
- *Hint: I like to pinch a piece of the meat mix off and microwave to cook and taste and will adjust seasoning if needed. You may want to hold off adding all the minced garlic and minced onion until you taste test the mix. You can always add but can't take away.*
- Roll either balls or logs. Depending on the size you roll will then determine your yield. I like to roll 10 balls and serve 2 to a serving.
- Chop cabbage and place about half in the pot.
- Layer with about half the sauerkraut.
- Place balls or logs on top of cabbage and sauerkraut mix.
- Top with rest of cabbage and sauerkraut.
- Add tomato paste to water and mix well.
- Pour into pot.
- Turn heat on high and cover.
- Bring to rolling bubble then reduce heat to low and simmer for 1 hour (with cover).
- Turn off heat and let mix sit for another hour or until ready to eat.
