Taco Soup

- 1 lb ground beef shopping list
- 1 tablespoon of tomato paste shopping list
- 1/2 red onion, finely diced shopping list
- 3 cloves of garlic, chopped shopping list
- 1 jalapeno, finely diced shopping list
- 1 (28oz.) can of diced tomatoes and juice shopping list
- 1 (8oz.) can of tomato sauce shopping list
- 1 (19oz.) can of kidney beans (thoroughly rinsed) shopping list
- 1 (12oz.) can of corn shopping list
- 1 pkg taco seasoning, hot and spicy shopping list
- Any additional seasoning of your choice shopping list
- 2 cups of water or beef/vegetable broth shopping list
- Juice of half a lime, to serve shopping list
- Shredded cheese of your choice, to serve shopping list
- Green onions sliced, to serve (optional) shopping list
How to make it
- Step 1: Brown beef, drain fat, and add in onions, garlic, and jalapeno if using. Saute until translucent. Add in tomato paste and seasonings and saute for a minute.
- Step 2: Add in half cup of the water/broth and allow to simmer for a few minutes. I personally find this really enhances the end product with respect to flavor.
- Step 3: Add in all additional ingredients and simmer on low for as long as you like. When ready to dish up finish by stirring in some lime juice
- Step 4: To serve, ladle into bowls and top with cheese.
- *Very versatile, eliminate spicy elements if you're not a fan and don't be afraid to use what's on hand. I love to eat this with a grilled cheese - ultimate comfort food
