Coconut Coffee Muffins

- 1/2 c. margarine, softened (or butter) shopping list
- 1/2 c. white sugar shopping list
- 1/2 c. brown sugar, packed shopping list
- 2 eggs shopping list
- 1 3/4 c. flour shopping list
- 1 tbsp. baking powder shopping list
- 1/4 tsp. salt shopping list
- 1/2 c. + 1tsp. coffee, strong brewed shopping list
- 1/3 c. milk shopping list
- 3/4 c. shredded coconut (sweetened) shopping list
- 1/2 tsp. vanilla (OPTIONAL) shopping list
How to make it
- Preheat oven to 375°F.
- Grease and flour 12 muffin cups, or use paper liners.
- In a large bowl, using electric mixer (or whisk), cream the butter, sugar and brown sugar until light and fluffy. Beat in the eggs one at a time.
- Sift the flour, baking powder and salt into a small bowl.
- Combine the coffee, milk, and vanilla (optional) in a different small bowl.
- Alternately blend the coffee mixture and the flour mixture into the butter mixture.
- Stir in the coconut.
- Divide the batter among the 12 muffin cups.
- Bake for 25-35 minutes or until a toothpick inserted in center comes out clean.
- Cool 5 minutes on rack in pan before removing from muffin tins and cool.
