How to make it

  • In a small bowl, combine the eggs with 1tbsp sesame oil and a touch of salt;
  • Heat the vegetable oil and remaining sesame oil in a wok or large frying pan until very hot, add the pancetta and stirring, cook for some 2 to 3 minutes or so until golden but not crispy,
  • Add the garlic, shallots and ginger and cook, stirring continuously, for some 2 to 3 minutes or so;
  • Add the egg mixture to the pan and stir fry for a minute or so until the eggs have set.
  • Add the chilled rice. Season with salt and pepper and stir fry for about 5 minutes on a medium high heat;
  • Add the peas, sweetcorn, ham, chicken & soy & oyster sauces to the wok, stir together and warm everything through - some 3 to 5 minutes or so;
  • Spoon the rice mixture into serving bowls and serve hot.

    I use brown rice, do you think I can use it instead, or should I go get the Basmati rice. I will go get it if it is better to use, just let me know!
