Easy Lemon Pie

Like to read mystery stories. Found one at the library; was unable to read the story, But this incredible pierecipe was included. I bake half the recipe and use a premade store bought graham cracker crust. Read more If desired you could add a meringue and it would pass as lemon meringue pie. See less
Ingredients
- 1 frozen pre-made 9 inch pie crust (or your own crust) shopping list
- 1 whole medium sized lemon shopping list
- 1/2 cup butter shopping list
- 1 cup white sugar shopping list
- 4 large eggs shopping list
How to make it
- Preheat oven to 350 degrees F.
- Cut the ends off the lemon and cut it in half. cut each half a lemon into four slices. The slices should look like wagon wheels. Now find all the seeds and throw them out.
- Using either a blender or a food processor, put the 8 slices into the machine. Process until it looks like mush.
- Melt the butter, and add to the lemon mush while machine is running. Next add the sugar followed by the eggs, one at a time.Run the machine until all is mushy and homogenized.
- Pour into crust and stick into the oven. Bake for 40 minutes; the top will look brown and the body of the pie will be solid. Let cool and refrigerate.
