Carrot Pudding

This dessert is a Christmas tradition - served with rum sauce. It is best made months in advance when the potatoes and carrots are fresh out of the ground, then stored in sealers until the holidays.
Ingredients
- 1 cup grated carrots shopping list
- 1 cup grated potatoes with 1 tsp soda mixed in shopping list
- 1 cup flour shopping list
- 1 cup brown sugar shopping list
- 1 cup margarine shopping list
- 1/2 tsp ground cloves shopping list
- 1/2 tsp nutmeg shopping list
- 1/2 tsp cinnamon shopping list
- 1/2 cup candied cherries shopping list
- 1/2 cup raisins shopping list
How to make it
- Mix all ingredients together well.
- Fill pint sealers 3/4 full.
- Steam 3 hours to cook and seal.
- Reheat in a double boiler over hot water and serve with rum sauce.
