Leftover Mashed Potato Pancakes

- 2 Cups Leftover Mashed Potatoes, I leave the peel on mine so these look cool shopping list
- 1 Large Egg shopping list
- 1/4 Cup Onion, Diced well, I like green onion, but you do you shopping list
- Olive Oil in a spray bottle shopping list
- Herbs, Chopped well, your choice, I use Italian Mix shopping list
- 1/2 cup of your favorite cheese, optional shopping list
- 1/4 to 1/2 Cup of flour, this is an optional item, only use if the mashed potatoes are not nice and firm shopping list

- NOTES FROM ERMA: All leftover mashed potatoes will vary in consistency depending on how much cream, milk or melted butter you added to the original batch. If the mashed potato pancake mixture looks too dry and isn't holding together, add one more egg. If it looks too wet, add more flour, 1 tablespoon at a time, until the mixture is cohesive. shopping list
How to make it
- Pre-heat your favorite pancake skillet, mine is a cast iron one, to cook the potato cakes in.
- Spray skillet with the olive oil spray, lightly!
- While skillet is heating up:
- Mix mashed potatoes, egg, onion and herbs all together well.
- If adding the cheese do so now, if not, please go on!
- If this is not firm enough to scoop with an ice cream spoon and place it into the skillet, so it looks like a ball of ice cream, add some flour.
- When skillet is ready, drop in one of the scoops of potatoes, I get 3 small ones into my large skillet.
- Cook a few minutes until brown on one side, flip and squish down to flatten the pancake.
- Let brown on that side, and flip again for a minute, to let the new white potato ring on this side brown a touch.
- Set aside until all are done/ready.
- Serve with whatever you like on them.
- Sometimes I use sour cream, gravy, grated cheese, salsa....You get the idea.
