Double Corn Tortilla Casserole Recipe

Ingredients
  • 8 corn tortillas
  • 1 1/2 c. shredded Monterey Jack or Pepperjack cheese
  • 1 c. frozen whole kernel corn
  • 4 green onions, sliced
  • 2 egs
  • 1 c. buttermilk
  • 1 (4oz) can diced green chilies

Directions
  1. Preheat oven to 325 degrees.
  2. Spray a 2 quart baking dish with nonstick cooking spray.
  3. Tear tortillas into bite-size pieces. Arrange 1/2 of the tortilas in the baking dish. Top with 1/2 of the cheese, 1/2 the corn and 1/2 the onions. Repeat layering with remaining tortillas, cheese, corn and onions.
  4. Stir together eggs, butermilk and chilies. Gently pour over the tortilla mixture. Bake uncovered in a 325 degree oven for 30 minutes. Serve warm.
