How to make it

  • Heat your corn tortillas on medium heat for however long you usually cook tortillas. If you've never had tortillas before, there are instructions on the package. If you're heating them in a pan, there's no need to use oil, but don't keep them on heat that long. (Only a minute or two on either side is good)
  • Add oil to the pan, add chopped ingredients, add herbs and spices, mix well and cover. Heat for approximately 10-12 minutes, stirring occasionally so it doesn't burn.
  • Taste one of the butternut squash pieces to test doneness, or if it needs more seasoning.
  • Remove from heat when done to your satisfaction, enjoy hot by itself with eggs, or in the tortillas with cheese and optional ingredients. I have mine with nutritional yeast for extra B vitamins but you don't have to. You may also use fresh parsley or cilantro with salsa or freshly squeezed lime juice.
  • This is really yummy, you should try it. 😋

    You know what,this was rather good!
    ...and,
    I'm not typing that in my shocked voice :o)
    I liked it so much so that I had it served to me by me on my salver...and,believe me when I say that not that many recipes have that much finesse to warrant a silver platter :o)
    Served along side a bowl of thawed blueberries and bing cherries,a bowl of cottage cheese sprinkled with sunflower seeds and a couple slices of fresh tomato with salt and pepper
    ...and,
    Oh!
    A nice glass of Texas Ranch Water....yes,there is such a thing,and one can not go wrong with a little tequilla,lime,mineral water to start their day in a very special way :o)
