Gluten-free Chicken Fajita Breakfast Hash (tortillas Optional)

- 3-4 corn tortillas shopping list
- 1 cup chicken breast, can be raw or cooked, chopped into bite-sized pieces shopping list
- ½ cup bell peppers, diced shopping list
- ½ cup red or yellow onion, diced shopping list
- 1 cup butternut squash, diced small shopping list
- 1 Tbsp jalapeño peppers, fresh or pickled from a jar, minced shopping list
- ½-1 tsp of each to taste: salt, pepper, granulated garlic, ground cumin, dried parsley, chili powder, smoked paprika, adobo. I also used Trader Joe's South African smoke seasoning, because I love it, but not everyone has access to that store. Whatever you have on hand is good enough. shopping list
- 1-2 Tbsp oil for frying shopping list
- Optional: Pepper jack cheese, nutritional yeast flakes, hot sauce. My taste buds are damaged so it takes a lot lol shopping list
How to make it
- Heat your corn tortillas on medium heat for however long you usually cook tortillas. If you've never had tortillas before, there are instructions on the package. If you're heating them in a pan, there's no need to use oil, but don't keep them on heat that long. (Only a minute or two on either side is good)
- Add oil to the pan, add chopped ingredients, add herbs and spices, mix well and cover. Heat for approximately 10-12 minutes, stirring occasionally so it doesn't burn.
- Taste one of the butternut squash pieces to test doneness, or if it needs more seasoning.
- Remove from heat when done to your satisfaction, enjoy hot by itself with eggs, or in the tortillas with cheese and optional ingredients. I have mine with nutritional yeast for extra B vitamins but you don't have to. You may also use fresh parsley or cilantro with salsa or freshly squeezed lime juice.
